December – Homemade Granola

There’s nothing better than receiving a homemade gift and this recipe makes the perfect Christmas pressie for friends and family. It’s super easy to make, so you can make a big batch and then divide it amongst jars. If you’re feeling a bit crafty you can cut a piece of material to put on the top and wrap some twine or ribbon around the lid. It’s a great way to use up leftover material or an old item of clothing (just cut out a nice piece with a cute pattern!)

We used a combination of raw almonds, hazelnuts, walnuts, pumpkin and sunflower seeds, combined with dried figs and sultanas for our granola.

Ingredients

4 cups rolled oats

1 cup raw nuts/seeds

1 cup coconut flakes

1 tbsp wattleseed, ground

1/2 cup dried fruit, chopped

1 pinch pink lake salt

1/4 cup honey or coconut sugar

1/4 cup coconut oil, melted

Method

  1. Pre heat the oven to 150 degrees.
  2. Combine all the dry ingredients in a large bowl and mix together.
  3. Whisk the sweetener and coconut oil together in a separate bowl.
  4. Add the wet ingredients to the dry and mix together.
  5. Tip the mixture onto an oven tray and spread out evenly.
  6. Bake for approximately 30 minutes or until golden brown.
