January has been filled with hot humid weather with lots of runs under the sprinkler and home-made icypoles! But I remember the start of school always being the hottest when I was a kid (before the days of air-con in classrooms) and these are a fantastic and healthy after-school treat.
Ingredients
3 cups berries or soft fruit (I used cherries)
1 cup coconut milk
¼ cup coconut sugar
1 tsp pure vanilla extract
85 grams dark chocolate
Crushed hazelnuts or walnuts or even shredded coconut
Method
1. Add your fruit, coconut milk, coconut sugar, and vanilla to a blender or food processor and blend until the mix is smooth.
2. Pour into molds and freeze until solid (at least 2-3 hours).
2. Break chocolate up into a double-boiler bowl or a heat-proof bowl that will fit into a larger saucepan. Place water into the saucepan and bring to a simmering boil. Place the heatproof bowl on the simmering water (don’t let the bowl touch the bottom of the saucepan). Once the chocolate has melted, let it cool to about body temperature.
3. Ready your toppings and a sheet-tray to place your coated icypoles on. Take your icypoles out of their molds and dip them in the chocolate place them on the sheet tray and sprinkle your nuts or coconut on top. Put them back in the freezer for about 20mins or until set.
